Lemon Poppy Seed Bread

Hip hip hooray—–you meet my newest contributor today!!!  🙂  Cheesy, I know.  I’m pumped!!  I am SO HONORED to be welcoming Jesseca from One Sweet Appetite to the Bombshell Bling team!  She is an AMAZING food blogger, and I am thrilled that she is part of the team!  I have been thinking lately that I just don’t bring you enough original recipes, so I decided to recruit some help in that area, and now it is Jesseca to the rescue!  Be sure to check out her blog, and be prepared to be hungry!  No, without further ado, here is Jesseca and her Lemon Poppy Seed Bread.  YUM.

Hi Bombshell Bling readers! My name is Jesseca and I am so excited to be the new food contributor here! You can check out a little more about me over on my site One Sweet Appetite and find more delicious recipes like the one below! But enough about me… Let’s get on to the good stuff! I have a serious love for citrus desserts. Especially lemon. This lemon poppy seed bread is high on the list of family favorites. It’s easy to make and almost a ‘cheater’ recipe using a cake mix base.

I am such a big fan of cake mix altered recipes. It takes the guess work out of baking and makes it extremely easy to whip together delicious treats! My home was filled with the most amazing lemon aroma while these were in the oven. While you should wait to slice until the bread is cool, temptation won me over and we spread a little butter onto a warm piece for a little taste test. So amazing. The poppy seeds add a fun little pop of flavor but the lemon is the true star of the show.

Lemon Poppy Seed Bread
Ingredients
  • 1 package lemon cake mix
  • 1 package (3.4 ounces) instant lemon pudding
  • 1 cup water
  • 4 eggs
  • ½ cup canola oil
  • 4 teaspoons poppy seeds
Instructions
  1. Preheat your oven to 350 degrees. Lightly grease the inside of two bread pans. Set aside for later.
  2. Mix together the cake mix, lemon pudding mix, water, eggs and oil.
  3. Fold in the poppy seeds until combined.
  4. Divide between your two cake pans and bake for 35-40 minutes or until a toothpick comes out clean.
