Cat in the Hat Inspired Strawberry Float Popsicles

Welcome back to my amazing food contributor, Jesseca from One Sweet Appetite.  Today Jesseca has a Cat in the Hat inspired Strawberry Float Popsicles recipe.  Doesn’t that sound amazingly refreshing?!  It is a perfect addition to the Family Adventure Series Dr. Seuss Week!  Be sure to check out the other ideas and tutorials from this series!  And now I will turn the time over to the lovely and talented Jesseca……

Oh my goodness how cute are all of the Dr. Seuss inspired posts from this week?! It was hard for me to decide what to contribute but I’m excited to be back from One Sweet Appetite with a treat from my favorite book. I’ve always been a big Cat in the Hat fan and it wasn’t until this week that I realized my five year old had never seen the book! I had to rectify that and headed straight to the store and added it to our library! He giggled and laughed at all of the shenanigans that cat pulled out of his sleeve. Happy that he takes after me with his love of the book I decided to make a fun treat inspired by the one and only.

cat-in-the-hat-strawberry-popsiclesThese Strawberry Float pospicles contain two ingredients. That’s right. TWO. Which means you can whip them up in no time at all! Which is perfect for the upcoming warm summer days. It’s always nice to have a quick way to cool down.

Strawberry Float Popsicles
Ingredients
  • strawberry soda
  • vanilla ice cream
  • popsicle molds
Instructions
  1. Prep your popsicle molds by cleaning and making sure they are dry.
  2. Fill just under a ⅓ of your mold with strawberry soda. Freeze for 30 minutes.
  3. Top with vanilla ice cream and your popsicle sticks. Freeze 30 minutes.
  4. Finish with your second layer of strawberry soda. Freeze until solid.

How fun are these? The soda can be swapped out for any flavor you might want to use. Maybe grape or root beer? It’s a fun and wacky twist on a float which I think fits right in with the Dr. Seuss feel.
