Mini S’mores Layer Cakes

Hi friends! I am happy to be here posting a S’mores Saturday recipe on my crazy cousin’s blog! I’m Amber from Crazy Little Projects, Sarah’s cousin and lover of all things chocolate, so S’mores are definitely on my list of desserts to love. I also do a lot of sewing, printables and fun crafts over at Crazy Little Projects.

Today’s recipe is a S’mores Mini Layer Cake. It’s a cute little miniature cake that tastes amazing! Layers of chocolate, marshmallow, and hot fudge, then sprinkled with graham crackers:

Miniature S'mores Layer Cakes: Layers of chocolate, marshmallow and hot fudge sprinkled with graham crackers

These are pretty easy to make too!

Mini S’mores Layer Cakes:

First, you need to bake some cupcakes. Here’s the recipe I use for this:

Cupcake Recipe:

  • 1 Devil’s Food Cake Mix
  • 1 5.9 oz. box of instant chocolate pudding
  • 1 C sour cream
  • 1 C vegetable oil
  • ½ C water
  • 4 eggs
  • 1Tbsp vanilla

Spoon the cupcake batter into muffin tins lined with cupcake papers. Fill them about 2/3 full or a little less.

Bake for 18-22 minutes (until they are just barely done-I always do exactly 18) at 350 degrees.

Now, let the cupcakes cool completely.

Ingredients Needed for Mini Cakes:

  • Small container of marshmallow fluff (or you can make your own using Sarah’s recipe HERE)
  • Hot fudge (store bought or use this recipe)
  • Graham Crackers

Once your cupcakes are cool, slice them into three layers, just like you would if you were making a layer cake.

Between each layer put a spoonful of marshmallow fluff.

On the top put marshmallow fluff and then drizzle hot fudge.

Sprinkle with broken graham crackers.

As it sits for a minute the marshmallow will sink into the cake and make it all ooey and gooey and amazing!
