A couple of weeks ago I got to guest post this Cream Cheese Strawberry Shortcake recipe on Tatertots and Jello. To say that I was thrilled to be invited to guest post there would be something of an under-exaggeration. I was THRILLLLLLLED!!!! (I know, I know, bad spelling doesn’t *really* change the meaning of the word. Cut a girl some slack, won’t ya?) 😉
Back in my pre-blogging days a crafty friend of mine introduced me to her blog obsession: Tatertots & Jello. When I called her last year to tell her how much fun I had having lunch with the lovely Jen at her darling cottage she almost died! She now thinks I am a big deal just because Jen is nice enough to let me be her fangirl. Haha. Little does she know! 😉
Anyway . . . on to the recipe. I want to share a summer recipe with you that is majorly delish: Cream Cheese Strawberry Shortcake. In the past I have always made individual strawberry shortcakes that have an almost biscuit-like consistency, but WOW is this simpler! A woman at my church gave me this recipe, which she had tweaked a bit from the original, and then I tweaked it a bit farther. We ended up making it for our entire church congregation and it was a huge hit. I hope that you enjoy it too!
- 3 cups Bisquick mix (12 oz.)
- 1 cup sugar
- 1 stick butter (1/2 cup)
- 1 cup buttermilk
- 2 teaspoons vanilla
- 2 eggs
- 1 (3.5 0z) box dry French Vanilla pudding mix (3.5 oz)
- 1 cup whipping cream
- 1 (8 oz) package cream cheese
- ½ cup powdered sugar
- 2 teaspoons vanilla
- 6 cups (about 2 lbs) fresh strawberries, sliced
- Heat oven to 335 degrees and grease a 9x13 pan.
- In a large bowl, beat together the Bisquick, sugar, butter, buttermilk, vanilla, eggs, and pudding mix thoroughly. Pour into the greased pan.
- Bake 35-45 minutes.
- Pour the whipping cream into a small bowl and mix until there are soft peaks. Set the whipping cream aside.
- In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla until well combined.
- Fold the whipping cream into the cream cheese mixture.
- Frost the cooled cake and top with strawberries. Refrigerate cake if needed.
- Serve and enjoy!
