Simple & Fun Cowboy Cactus Dessert

Such a simple fun food idea for kiddos, especially for cowboy parties!

Last month I signed up to bring a dessert for my daughter’s cowboy party at school.  You may not believe me, but I never go the extra mile for stuff like that.  I always throw some store bought fruit snacks into their backpacks and call it good.  Truly.

However, this year my daughter’s teacher is a Pinterest fan who has checked out my blog, so when I signed up she said something about how I would be creating something super cute.  Uh uh!  Time to step up my game.  A little.  Seriously, this was the laziest way to step up my game ever.  It’s 100% bagged and boxed “baking.”  Because that’s how I roll.  😉

Here’s how I did it:

1.  Take a bag of bagged sugar cookie mix from the grocery store and mix it up.  Add a little green food coloring to the mix.

2.  Use a cactus cookie cutter (I got mine at Sur La Table – shockingly cheap!) to cut the cookies.  Sprinkle the green sugar sprinkles on top and lightly press them into the dough with your hands.  Bake as directed on the bag.

3.  Make instant vanilla pudding.  Pour it into small, clear cups and allow to cool.

4.  Stick a cooled cactus cookie into the pudding and sprinkle crushed up vanilla wafer crumbs on top of the pudding to look like sand.

Ta-da!  Super easy, super cute treat!

    This looks great and so easy! I just returned from a wonderful week with my grandchildren in New Mexico. I saw lots of cactus. When I go back in October I plan on making this with them. I have pinned it for safe keeping.
