Hello, hello!!! Today I want to share with you one of my favorite go-to recipes for lazy cooking days: Pineapple BBQ Quesadillas. And let’s just say that we have had them for dinner three times in the last week and a half…… Yeah.
My sister introduced me to this taste combo, and now I’m in love. Sweet and savory together. Yum, yum, yum! We make them with chicken, but if you would like a vegetarian meal then just leave it out! I will walk you through the recipe in photo form, and then you may notice the nifty new recipe gadget I have that will allow you to print out the recipe easily if you so desire. I’m pretty pumped about it. It’s so handy!
To make this little treat you will need tortillas, BBQ sauce, pineapple tidbits, cheese, and shredded chicken. We LOVE the uncooked tortillas that I buy in the dairy area of Walmart, but they are a bit hard to find, so I have made this meal with regular, pre-cooked tortillas as well. This BBQ sauce is our favorite EVER, but it can only be bought at the restaurant Pappy’s BBQ in St. Louis, sadly. We stockpiled a bunch of it before we moved away. True story. Use any cheese that is your favorite. I usually use a Mexican blend, but my sister prefers pepperjack. For the pineapple I usually use canned pineapple tidbits because I’m lazy, but my sister uses fresh. Fresh is better, let’s be honest. Lastly, I just shredded some cooked chicken breasts and marinated them in salsa. Easy-peasy. Sometimes I even buy pre-marinated chicken strips in the freezer section when I am feeling even lazier than usual.
Cook up your tortilla(s). I leave one side slightly undercooked. That is the OUTSIDE. That way it will crisp up when it’s melting the cheese, rather than getting burnt.
This is how I lay mine out. Cheese, chicken, and pineapple on one side, BBQ sauce on the other. My sister goes big and puts cheese, chicken and pineapple on the ENTIRE thing and BBQ sauce on a separate tortilla. Go big or go home, right?!
Now fold your tortilla in half and crisp it up while the cheese melts.
Now enjoy!! Mmmmmm……
- Flour Tortillas (We love the uncooked kind found in the dairy section of some stores.)
- Cheese (Any variety - we usually mix cheddar and pepperjack)
- Pineapple Tidbits (fresh or canned)
- BBQ Sauce
- Chicken (optional)
- Cook your tortilla (if you are using the uncooked ones).
- Spread a little BBQ sauce on half of a tortilla.
- Cover the other half of the tortilla with cheese.
- Sprinkle small chunks of chicken and pineapple on top of the cheese.
- Fold your tortilla in half and grill it up!
- Cut it into wedges and enjoy!

Oh how I love Pappy’s! My best friend went to grad school at Wash U. On a visit I was introduced to the wonderfulness that is Pappy’s. We live in Texas and. It a single place we’ve been to touches the amazingness of Pappy’s sauce. You can buy the stuff off their website. Shipping isn’t cheap, but we do it at least once a year as a treat.
The recipe looks yummy. My husband loves pineapple and BBQ sauce. He’ll be thrilled when I make this. Now to order some sauce….

These look so good, I bet the pineapple tastes really good in the quesadillas!!! I will have to try that, I love making quesadillas, because whenever we have no food left in the house, we somehow still have ingredients to make quesadillas! These look really good! 🙂
