Sarah asked me to do a little follow up on my strawberry themed birthday party and share with you the strawberry cake recipe. You are going to love this recipe! I am not a huge fan of baking, but I still make this cake a couple of times a year, because it is just too good not to. I originally got this recipe from my mother and it is one of my favorite family recipes. Both the cake and the frosting are super delicious!!! You will have to try to keep yourself from eating all of the frosting straight out of the bowl so that there will actually be some left to put on the cake.
Strawberry Cake
1 package of plain white cake mix with no pudding
3 oz. package of strawberry gelatin
1 cup mashed fresh Strawberries with juice
1 cup vegetable oil
1/2 cup whole milk
4 large eggs
Strawberry Cream Cheese Frosting
8 oz. package cream cheese
8 tablespoons butter at room temperature
3 1/2 cups powdered sugar
3/4 cup fresh strawberries, chopped, mashed, and drained well
- Preheat oven to 350 degrees. Lightly grease two round 9 inch cake pans
- Mix together the cake mix, strawberry gelatin, mashed strawberries with juice, oil, milk, and eggs in a large mixing bowl. Mix together for three minutes
- Pour cake mix into cake pans and place in oven for 28 – 30 minutes.
- Once the cake is finished cooking, remove the pans from the oven and place them on a wire rack to cool for at least 10 minutes. Then run a knife around the edge of each cake and turn over each cake pan so the cake layer is laying on the wire rack. Then allow them to keep cooling for at least another 30 minutes.
- Meanwhile, you can prepare the frosting. Combine the cream cheese and butter in a medium bowl with an electric mixer for 30 seconds. Stop the mixer and add the sugar and drained strawberries (Make sure the strawberries are well drained! The better drained they are the thicker the frosting will be. As you can see in the pictures of my cake, I did not drain the strawberries well enough and the frosting was a little runny. It was still delicious, but it could have looked a little prettier if the frosting was thicker.)
- When it comes time to assemble the cake place one cake layer right side up on your serving platter. Spread the top with frosting. Then add another cake layer, right side up, and frost the top. Use the remaining frosting to frost the sides.
