It’s back to school season, and that means it’s SNACK TIME! I don’t know about your family, but during the school year my family intakes far more snacks and pre-prepared foods. We are just in a hurry all the time! This year I was delighted to discover Jose Ole Mexican brand frozen foods. Mexican food is one of my favorite food types anyway, and add in the convenience of having the foods pre-prepared and you have one happy Sarah! 🙂 Everyone loved them . . . even my kids!
My husband loves to cook, and he suggested that we make a creamy cilantro dipping sauce to make these taquitos even a bit more special. It was incredibly easy to make and definitely made this particular snack more enjoyable! Here is how you can make it yourself — all you need is a blender!
- 1 avocado
- ¼ cup sour cream
- juice of 2 limes
- 1 cup loose cilantro
- 2 scallions
- 2 cloves garlic
- 1 Tablespoon honey
- ½ cup buttermilk (or more to desired consistency)
- Salt and Pepper to taste
- Throw all the ingredients in a blender and blend well until smooth.
Ta-da! Yummy dipping sauce all ready to roll! My kids were pumped when I served this to them yesterday after school, and I know yours will be too! You can find Jose Ole in the freezer section at your local grocery store.
