Chocolate Chocolate Chip Cake
 
 
Ingredients
  • 1¾ cups boiling water
  • 1 cup old fashioned oatmeal (not quick oats)
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 stick margarine or butter
  • 12 ounces chocolate chips
  • 2 large eggs
  • 1¾ cups flour
  • 1 teaspoon soda
  • ½ teaspoon salt
  • 1 Tablespoon cocoa
  • ¾ cup chopped almonds
Instructions
  1. Preheat the oven to 350 degrees.
  2. Pour boiling water over dry oatmeal in a large mixing bowl and allow to stand at room temperature for 10 minutes.
  3. Add the sugars and the margarine or butter and stir until it is melted.
  4. Add the eggs and mix well.
  5. In a separate bowl mix together the flour, baking soda, salt, and cocoa.
  6. Add the dry ingredient mixture to the wet ingredient mixture and mix well.
  7. Stir in ⅔ of the chocolate chips.
  8. Pour batter into a greased and floured 9x13 pan.
  9. Sprinkle the chopped almonds and the remaining chocolate chips over the top of the cake batter.
  10. Bake at 350 degrees for 45 minutes to an hour, until a toothpick comes out clean from the center.
