Zucchini Bread
  • 3 cups flour
  • 1 Tablespoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • 3 eggs
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup canola oil
  • 1 Tablespoon vanilla
  • 2 cups grated zucchini
  1. Beat together the eggs, both sugars, oil, and vanilla.
  2. In a separate bowl stir together the flour, cinnamon, salt, baking soda, and baking powder.
  3. Stir together the dry and wet ingredients. The mixture will be very thick and seem a bit dry.
  4. Grate your zucchini and mix it into your batter mixture well. At this point it should no longer be dry.
  5. Pour your batter into two greased and floured bread pans.
  6. Bake at 325 degrees for about an hour. A toothpick should come out clean from the center when the bread is done.
