Christmas Caramels
 
 
Make some of my granny's Christmas caramels to delight your friends and neighbors this year! Smooth and chewy, they are a perfect treat!

Ingredients
  • 1 stick unsalted butter
  • 2 cups sugar
  • a few grains of salt
  • 1 cup DARK Karo syrup
  • 2 cups whipping cream
  • 1 teaspoon vanilla
Instructions
  1. Grease 9x13 pan with butter.
  2. In a large pot, combine butter, sugar, salt, dark Karo syrup, and ONE cup of whipping cream.
  3. Cook to 230 degrees over medium-high heat, stirring occasionally.
  4. Take the pot off the heat and stir in the remaining cup of whipping cream.
  5. Return the pot to the heat and cook to 230 degrees again over medium-high heat, stirring occasionally.
  6. Remove the pot from the heat and stir in 1 teaspoon vanilla.
  7. Pour into the buttered pan and cool overnight.
  8. Cup and wrap individually with wax paper.
