Christmas Caramels
- 1 stick unsalted butter
- 2 cups sugar
- a few grains of salt
- 1 cup DARK Karo syrup
- 2 cups whipping cream
- 1 teaspoon vanilla
- Grease 9x13 pan with butter.
- In a large pot, combine butter, sugar, salt, dark Karo syrup, and ONE cup of whipping cream.
- Cook to 230 degrees over medium-high heat, stirring occasionally.
- Take the pot off the heat and stir in the remaining cup of whipping cream.
- Return the pot to the heat and cook to 230 degrees again over medium-high heat, stirring occasionally.
- Remove the pot from the heat and stir in 1 teaspoon vanilla.
- Pour into the buttered pan and cool overnight.
- Cup and wrap individually with wax paper.
