The easiest chicken tortilla soup ever, but incredibly delicious!  It is one of my family’s staples that we make time and time again.

I am sooo excited to share with you my Chicken Tortilla Soup Recipe as part of yet another progressive blog dinner from my amazingly talented group of blogging buddies!  Did you catch our Spring and Summer Progressive Dinners?  This one is just as impressive, I promise!

This season’s theme is none other than COMFORT FOODS!  Seriously…..YUM!  Are you even kidding me with all of this deliciousness?!  I will be sharing one of my family’s go-to recipes.  This Chicken Tortilla Soup is so amazingly simple, and it makes a huge batch.  I usually double it and freeze some of it.  It’s not quite as perfect after it has been frozen, but it is still very yummy, and I love having meals in the freezer.

I would classify this recipe as a “comfort food” both because it is so irresistibly tasty, and because we found this recipe when we were in need of comfort.  My mother passed away ten years ago, and all of the ladies from church and the neighborhood brought us meals for awhile afterward.  One of the neighborhood ladies brought us this soup and my dad was OBSESSED.  I mean OBSESSED!  He asked her for the recipe and she looked horrified.  She stammered a bit about how it was a secret family recipe, but my dad just stood there looking hopeful and she couldn’t say no to the sad, young widower who wanted her soup recipe.  And we have been making it monthly since then!  Haha.  Poor lady.  The recipe cat is out of the bag, and I am here to share the goods with you.  Enjoy!  🙂

Chicken Tortilla Soup Recipe
Ingredients
  • 3 cans chicken broth
  • 1 can beef broth
  • 2 cans tomato soup
  • 2 cans Rotel tomatoes
  • 1 chopped onion
  • 2 chicken breasts, cooked and shredded
  • ½ c. fresh cilantro
  • 1 T chili powder
  • 1 T cumin
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can garbanzo beans, drained
Instructions
  1. Place all ingredients into a large pot.
  2. Bring to a boil; turn down heat and simmer for at least one hour.
  3. Serve with shredded cheese, sour cream, and tortilla chips on top.

    yum! I love making chicken tortilla soup. I love that you add garbanzo beans to your recipe! I’ve never done that before–must try!

      Sorry, but I have never calculated that out. I would try searching on Google to see if there is a website where you can enter in a recipe and get that info. I’m so glad that you like it!!

    This was so good! I made it tonight for dinner. It hits all my favorite recipe criteria: consists of things I always have in the pantry, and is quick enough to make before my kids kill eachother 🙂 I even left out the cilantro because I ran out (even though I was at the store twice today!) and it was still so good! Thanks for sharing!

    I make this but leave out corn-because I’m on low carb. I add some cream cheese right at the end. I like creamy soups. Black beans are fairly low carb so o do use them. You have to try this recipe. It is very good on a cold day.
