Hi all you Bombshell Bling readers! I’m excited to be back again from One Sweet Appetite sharing one of my favorite NEW summer recipes. Summer is really the perfect time to create fruit pies and cobblers. Peach is always a great standby, but mixing in a handful of blueberries kicks up the flavor and you are left with a warm mound of goodness!
For the dough:
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
3 tablespoons sugar
1/4 teaspoon salt
1 tablespoon salted butter, softened
1 tablespoon shortening
1/4 cup milk
2 tablespoons heavy cream
Combine the flour, baking soda, cream of tartar, sugar, and salt in the bowl of your electric mixer. Stir lightly. Mix in the butter and shortening until they resemble fine crumbles. Add the milk and cream until combined and a smooth ball is formed. Wrap in plastic and place in your refrigerator for later use.
For the cobbler:
1 tablespoon butter
2-3 cups of peaches, peeled
1/2 cup brown sugar
1/2 cup warm water
1 tablespoon cornstarch
1/2 teaspoon lemon juice
1 cup blueberries
1/2 teaspoon pure vanilla extract
Preheat your oven to 350 degrees. Lightly butter a 9 inch square pan and set aside.
Whisk together the water and cornstarch until dissolved in the bottom of a medium pan. Stir in the sugar, peaches, and lemon juice. Let that sit for 15 minutes.
Bring your peach mixture to a boil, stirring consistently. Cook for 7 minutes and remove from the heat. Stir in your butter, blueberries, and vanilla. Pour into your prepared dish.
Roll your dough until it is 1/2 an inch thick. Cut circles or shape that suits you and place on the top of your cobbler until completely covered. Brush with melted butter and sprinkle with sugar. Bake for 25-30 minutes or until browned.

The best part about this recipe is how interchangeable it is. So, say you aren’t feeling the blueberries… You can grab some raspberries or even blackberries and substitute in those. Or even switch out the peaches. Once we even doubled the blueberries and left out the second fruit all together. You really just can’t go wrong.
Whip up a batch of this No-Machine vanilla ice cream and plop a big scoop right on top of your serving. There is nothing quite like a warm cobbler with melted vanilla swirling into each bite.
