Cream Cheese Strawberry Shortcake
- 3 cups Bisquick mix (12 oz.)
- 1 cup sugar
- 1 stick butter (1/2 cup)
- 1 cup buttermilk
- 2 teaspoons vanilla
- 2 eggs
- 1 (3.5 0z) box dry French Vanilla pudding mix (3.5 oz)
- 1 cup whipping cream
- 1 (8 oz) package cream cheese
- ½ cup powdered sugar
- 2 teaspoons vanilla
- 6 cups (about 2 lbs) fresh strawberries, sliced
- Heat oven to 335 degrees and grease a 9x13 pan.
- In a large bowl, beat together the Bisquick, sugar, butter, buttermilk, vanilla, eggs, and pudding mix thoroughly. Pour into the greased pan.
- Bake 35-45 minutes.
- Pour the whipping cream into a small bowl and mix until there are soft peaks. Set the whipping cream aside.
- In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla until well combined.
- Fold the whipping cream into the cream cheese mixture.
- Frost the cooled cake and top with strawberries. Refrigerate cake if needed.
- Serve and enjoy!
